Thinking about ChatGPT as a pedagogy problem rather than a plagiarism problem, is a way to approach our teaching generatively.

Scaffolding assignments can help.  Scaffolding mitigates library anxiety, imposter syndrome, and accidental plagiarism. Rather than assigning a big, summative paper or project at the end of the course, breaking it up into stages with student reflection reinforces original work and a growth mindset, which can reduce the perceived need for students using a tool such as ChatGPT.

Ethan Mollick, Wharton School at Univ. of Pennsylvania professor, in his book Co-Intelligence: Living and Working with AI (2024)  urges us to engage with AI as co-worker, co-teacher, and coach. He assesses its profound impact on business and education, using dozens of real-time examples of AI in action.  Mollick is also the author of One Useful Thing Substack newsletter which discusses working, learning, and living in the new age of AI.
